French Omelette

Yesterday my friend, Mani, posted a video on Facebook of Jacques Pepin teaching how to make a French omelette. I love eggs and eat them multiple times a week in different styles (mostly scrambled since that's my favorite), but I don't like omelettes because they're often overcooked. Watching Jacques prepare these eggs I immediately had to try it out and this morning I had my second French omelette.

  • 2 eggs
  • 2 teaspoons fresh herbs (I used thyme and leeks...I know that isn't an herb, but I had it on hand)
  • 2 teaspoons butter
  • salt and pepper (pinch of each)

Heat your butter in a small fry pan on medium high heat. In the meantime, crack your eggs on a flat surface then drop into a small bowl (Jacques said breaking on a flat surface helps prevent bacteria from getting into the eggs). Add your fresh herbs and salt and pepper. Poke your eggs first to break the yolk (Jacques taught me this too so it scrambles better), then beat back and forth till it's fully beaten (that's what he said).

Pour your egg mixture into the hot pan and start moving the egg from around the edges into the center. Do this until it begins to look more like custard and solidifies. As it begins to almost be finished, tilt your pan and let the egg go into the curved edge of the pan and let it form a sort of half moon shape. Turn onto a plate and enjoy.
