Quinoa is a delicious, healthy alternative to other starchy sides and can be used in place of rice in most cases. Here I just added:
- 3/4 cup quinoa
- 1 cup variety of sautéed vegetables
- half an avocado
- 2 tablespoons salsa verde
- 1/4 cup black beans
- 2 tablespoons cilantro
When cooking your quinoa (follow the instructions on the bag), try using vegetable/chicken/beef stock for added flavor. Mix in all your add-ins above and enjoy a hearty and healthy meal.
